How to Clean: For best results, rinse the pan with hot water immediately after cooking. If you need to remove burned-on food, scrub with a stiff, non-metal brush and dry immediately; you can also use a few drops of a mild dishwashing soap every once in a while. If the pan gets a sticky coating or develops rust over time, scrub it with steel wool and re-season it. To prevent rust, dry the pan thoroughly and lightly coat the cooking surface with cooking oil. Cover with a paper towel to protect it from dust.
Seasoning Care: This pan comes pre-seasoned, but the manufacturer advises following these easy steps to ensure the longevity of your pan and bolster its non-stick properties: Using a paper towel, coat the upper side of the pan with a thin layer of lard or grease. Place upside down on the middle rack of a 300°F oven. Place a foil or a cookie sheet on the bottom rack to catch any spills. Cook for 2 hours. Going forward, you'll need to reinforce the non-stick properties whenever you cook with oil.
