Amazingly, vanilla beans must remain on the vine for nine months, then go through an arduous curing and drying process in order to develop the complex flavor and fragrance the world has grown to love. Beans are heated in ovens or blanched in hot water, then placed in the sun for weeks, or sometimes months. They are then placed in large wooden boxes and allowed to "sweat." They will lose up to 80% of their moisture content before the process is complete. The entire process from pollination to shipment takes about one year.
